Ingredients
- cup celery root/ celeriac cut into 1 inch cubes
- 1 cup cauliflower cut into florets
- 3 cloves garlic
- 1 tsp grapeseed oil
- salt and pepper to taste

Instructions
- Preheat over to 425
- Cover baking tray with foil.
- Place garlic under the cauliflower florets on the tray. Add the celery root.
- Spray or brush the grapeseed oil on the celery root and cauliflower.
- Roast for 20 minutes or until soft.
- Remove from oven and use the foil wrap to cover the vegetables. Let sit for 10 minutes.
- Place in a bowl and use an immersion blender to mix until smooth. Add salt and pepper to taste.
