LillyPad Roasted Mash
Who needs potatoes? This roasted garlic mash is low carb and has more flavour. It is fantastic on top of shepherds pie or beside any protein.

Ingredients
cup
celery root/ celeriac
cut into 1 inch cubes
1
cup
cauliflower
cut into florets
3
cloves
garlic
1
tsp
grapeseed oil
salt and pepper
to taste
Instructions
Preheat over to 425
Cover baking tray with foil.
Place garlic under the cauliflower florets on the tray. Add the celery root.
Spray or brush the grapeseed oil on the celery root and cauliflower.
Roast for 20 minutes or until soft.
Remove from oven and use the foil wrap to cover the vegetables. Let sit for 10 minutes.
Place in a bowl and use an immersion blender to mix until smooth. Add salt and pepper to taste.
