- 1/2 cup celery thinly sliced
- 1/2 cup jicama sliced into matchsticks
- 1/2 cup fennel bulb sliced into matchsticks
- 1 tsp olive oil
- 1 Tbsp lemon juice
- salt and pepper to taste

Instructions
- Prepare the vegetables as noted. Using a Mandoline to slice the vegetables will help.
- Mix ingredients in a bowl, tossing well until evenly coated. Serve.
