- 6 stalks celery stalks chopped
- 1 cucumber, english peeled, seeded, thinly sliced
- 1/3 cup parsley, fresh coarsely chopped
- 1/4 cup mint leaves coarsely chopped
- 2 Tbsp olive oil
- kosher salt to taste
- ground black pepper to taste
