Ingredients
- 1 1/2 cups cucumber peeled, seeded, finely chopped
- 1/4 cup green onion sliced
- 2 cloves garlic minced
- 1 Tbsp jalapeño pepper seeded and chopped
- 4 1/2 tsp cilantro, fresh minced
- 1 1/2 tsp lemon juice
- 1 1/2 tsp lime juice
- 1/4 tsp cumin
- 1/4 tsp salt

Instructions
- In a small bowl, combine the veggies.
- In another bowl, combine the lemon juice, lime juice, cumin, garlic box seasoning, cilantro and salt. Mix well.
- Pour over cucumber mixture and toss gently to coat.
Recipe Notes
If you are following an Ideal Protein protocol: This recipe only counts as 1/4 cup of select vegetables as raw cucumbers are unlimited vegetables. Try adding raw slices of chayote or jicama to increase the vegetable amount.
