Instructions
  1. Preheat oven to 400°F.
  2. Mix taco seasoning ingredients together in a bowl.
  3. In a medium frying pan, brown your ground beef seasoned with taco seasoning (add to taste).
  4. Spread your ground beef meat evenly in a sprayed 9 x 9-inch baking dish.
  5. Drain your canned tomatoes, and spread your canned tomatoes and chiles evenly over your beef mixture.
  6. Add your beaten eggs & egg whites over the top of the dish and sprinkle everything with chopped cilantro (to taste).
  7. Bake your beef casserole for 25 minutes or until the eggs set and don’t jiggle when you move the pan. Do not over bake, or the eggs will go from being tender to being too tough!
  8. Cut your baked beef casserole dish into four squares.
  9. Plate using two squares, one topped over the other, and top the dish with shredded lettuce, cilantro, Janeva's Mockamole, and Janeva's Pico de Gallo.
  10. Refrigerate the remaining two squares for later, or serve it to a friend!
