Ingredients
- 4 cups zucchini sliced into ribbons
- 1/2 cup basil, fresh chopped finely
- 2 tsp olive oil
- 1 tsp garlic paste
- sea salt to taste

Instructions
- Preheat oven at 350 F.
- With a mandolin or vegetable peeler, thinly slice zucchini into ribbons.
- Mix the olive oil, garlic paste, and basil together. Brush onto ribbons.
- Roll the ribbons into rosettes and nestle closely into your baking dish of choice. 22cm or 8-9 inches in diameter.
- Bake 1 hour and 15 minutes.
- Sprinkle with a little sea salt to finish.
