Ingredients
- 2 cups diced tomatoes, canned
- 2 cups cucumber, english
- 1 cup bell pepper
- 1/2 cup red onion
- 1/2 cup jalapeño pepper halved and seeded
- 1 cloves garlic minced or pressed
- 2 tsp olive oil
- 2 Tbsp lime juice
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- sea salt to taste

Instructions
- Chop all vegetables into 2 inch chunks.
- Place everything except olive oil in the blender and blend until smooth. Drizzle olive oil in while the blender is on to make it creamy.
- Chill for 3 hours then serve with grilled shrimp or Ideal Protein Rotini pasta
