Ingredients
- 1 cup bell pepper cut into 1 inch chunks
- 1 cup eggplant peeled, cut into 1 inch chunks
- 1 cup diced tomatoes, canned
- 1 cup zucchini cut into 1 inch cubes
- 2 tsp grapessed oil
- 2 packet Ideal Protein Rotini
- 1/2 tsp onion powder
- 1 tsp dried oregano
- 1 bay leaf
- salt and pepper to taste

Instructions
- Heat oil in a pan.
- Sauté peppers, eggplant and zucchini for 10 minutes on medium.
- Add tomatoes and seasoning, then cover the pan and reduce temp to low. Simmer for 15 minutes.
- Cook Ideal Protein Rotini as directed on package.
- Combine both when they are done.
