Ingredients
- 1 packet Ideal Protein Rotini
- 1/4 cup dill pickles diced
- 1/2 cup bell pepper diced, red peppers are best
- 1/4 cup red onion diced
- 1 cup spinach
- 1 tsp dijon mustard
- 1 tsp Walden Farms mayo
- 1 tsp olive oil
- 1 tsp dill pickle juice
- salt and pepper to taste

Instructions
- Cook rotini for 5 - 7 minutes. Rinse and let cool.
- Mix dressing ingredients together. Stir dressing and vegetables together, then add rotini.
- Serve on bed of spinach.
