- 1 cup cucumber sliced into ribbons
- 1 cup bell pepper sliced into ribbons
- 1/2 cup red onion sliced into ribbons
- 2 tsp dried cilantro
- 2 tsp dried mint
- 1/4 cup dill pickle juice
- 1 tsp yellow mustard
- 1 tsp olive oil
- 1 clove garlic minced
- salt and pepper to taste
- parsley, fresh optional garnish

- Add vegetables and toss until well coated.
