Cucumber Salsa
A delicious cold salad for cucumber lovers. Goes well with chicken or the Ideal Protein Chicken Patty.

Instructions
  1. In a small bowl, combine the veggies.
  2. In another bowl, combine the lemon juice, lime juice, cumin, garlic box seasoning, cilantro and salt. Mix well.
  3. Pour over cucumber mixture and toss gently to coat.
Recipe Notes

If you are following an Ideal Protein protocol: This recipe only counts as 1/4 cup of select vegetables as raw cucumbers are unlimited vegetables.  Try adding raw slices of chayote or jicama to increase the vegetable amount.
