Heat oil in large non stick saute pan over medium heat. Saute the cumin, turmeric and curry powder for 1 minute.
Add the celery root and saute until cooked, about 5 minutes, then cover and cook at medium low for 15 minutes stir every 5 minutes until cooked to your liking.
Toss with salt, pepper and cilantro. Serve.
