  1. Place zucchini cubes on a paper towel and lightly salt them, allowing them to sweat out moisture for 10 minutes.
  2. Puree ingredients into a smooth consistency.
  3. Serve with raw cut vegetables like celery, radish, cucumber or lettuce.
